Giant Springrolls

This is one of my favourite recipes to make as a group, so round up your helpers and get ready for something delicious!
I found these spring roll wrappers at an Asian grocery store. You can get different sizes. This is the biggest size with 30 wrappers for about $4.

Other ingredients include:

Shredded carrot
Shredded cabbage
Thin rice noodles
Ginger (optional)
Garlic (optional)
Egg (for helping the wrappers stay closed)


Line the ingredients up inside a wrapper and fold them. One way to fold them is to fold the top down,  then the bottom, spread some egg over the edges, fold the left edge over then continue rolling. The wrappers are pretty delicate; they split when they are soggy or overfilled and they are impossible to work with frozen. Ideally, have a production line going so you can put them straight into the frying pan after you have wrapped them.


These can be cooked in the oven, but they taste so much better deep fried in oil! Cook them until they are nice and crispy. Serve ASAP with soy sauce or sweet chilli sauce.
